About Apprenticeship
Come immerse yourself in the most biologically intense area on Earth. Get specialized training and work alongside farmers, and processors during a 1-3 month Planting, Harvest, Preservation & Cooking-Immersion Apprenticeship with non-profit CocoaEthika, Osa Alchemy and Finca Morpho on the Osa Peninsula.
You will be working with many different fruit, roots and vegetables but with cacao as our foundation. You will learn the entire cacao post-harvest to chocolate making process... from tree to bar with an emphasis on planting and harvesting. We will venture out to different farms on the Osa Peninsula on bi-monthly planting trips and the rest of the time will be spent working in community activities like taking turns on cooking shifts to cook for each other alongside fellow apprentices and farmworkers...also cleaning and managing compost and waste in order to put into practice basic permaculture principles while staying at our sister farm La Paz or Finca Morpho's Sombrero location.

Pricing & Details
$1,300 per 30 day stay, with 3 month apprenticeship recommended, food and glamping dorms included. This requires 10 hours per week cooking, cleaning * waste management and 2, 3-day planting missions to local farms.
Dates are flexible. Apprenticeships are now open for June and July 2020: Arrivals
In your downtime, you can do a variety of activities offered on the Osa Peninsula like kayaking, fishing, visiting national parks, waterfall hikes, surfing or surf lessons or just explore and experience the Osa and Costa Rica however you choose to during your free time.
The following foundational themes and topics should be learned by the end of your apprenticeship:
-How to appreciate nature and understand the complete cost of your consumption habits so that you can make better purchasing decisions.
-How to work well with others in a permaculture community by developing communication skills through practice using non-violent communication in regular meetings.
-Become self-reliant by planning for a permacultural relationship with the earth including how to plant, harvest, preserve, store and barter with your community and other communities.
-Gain experience by cooking alongside your co-apprentices the wonderful abundance you will be learning about with our specialized healthy, organic, vegan, vegetarian and glutten free recipes. The basic fruit, roots & vegetables that you will be working with and eating are:

Also included: Farmer Appreciation, How to plant, harvest, gather and open of cacao pods. Cacao bean fermentation basics theory. You will learn how to roast cacao as well as develop your pallet to gain the skill of judging beans for quality and taste. You will also learn about the economics of the outdated and harmful industrial global supply chains that are harming the earth now and how to cut them out entirely. You will also learn about ending cacao ferments & transfer to drying stage washing, transportation embodiments to the solar dryer, how to properly build a solar dryer and tables, drying time frame importance, and avoiding off-flavors as a result of poor post-fermentation handling. Chocolate Laboratory Basics. Long term cacao bean and other fruits roots and vegetable long term storage.
